Let’s Cook! Make the most of strawberry season

email: June is one of my favorite months with strawberries peaking in season. My family has spent many years frequenting the local strawberry farms near our home, and although my oldest no longer wants to join us in the annual pilgrimage of eating and picking, he’s still on the intake once we get home.
I have friends who pick and freeze, but somehow, even with a carload of strawberries on the way home, there are never enough to make it the freezing stage. In our home, strawberries just give us one more reason for experimenting and taste testing.
Here are two kid-friendly recipes that have resulted from those experiments.
Strawberry Cinnamon Pizza
5 small flour tortillas (approximate 5-6 inches in diameter)
1 1/2 Tablespoons of sugar
1 Tablespoon of cinnamon
Water
20 medium strawberries
1/2 cup of chocolate morsels
Preheat your oven to 375 degrees. Place the tortillas flat on baking sheets. Using a basting brush, coat one side of the tortilla with water. (Kids love this step! They can be painters of food.)
In a bowl mix the sugar and cinnamon together. Sprinkle the cinnamon sugar over the tortillas evenly.
If you’re afraid your kids will pour it all on one tortilla, divide it into five portions first. If they pour it in one lump, no worries, just spread it around with a spoon (It’s happened to us, too!).
Bake the tortillas for 10 minutes and let cool. Wash the strawberries and remove the greens. Chop the strawberries in a food processor. Using a spoon, spread the chopped strawberries evenly over the tortillas.
In a glass bowl, melt the chocolate morsels for one minute in a microwave. They typically don’t look melted when they first come out, but stir and they will all melt together.
Drizzle a small amount of chocolate over each tortilla just to top it off with a hint of chocolate flavor.

Strawberried Muffins
1 English muffin
1 tablespoon of strawberry yogurt
1 tablespoon of cream cheese
1/8 teaspoon of vanilla extract
4 medium strawberries
Wash the strawberries and remove the greens. Chop the strawberries with a food processor or knife. Set aside.
Strawberries are great for little hands to chop using a plastic knife to minimize the hazard while allowing little cooks to feel like big cooks.
Toast the English muffin as desired. In a bowl, mix together the yogurt, cream cheese and extract until smooth using a metal spoon or mini whisk.
Spread a layer of the cream cheese mixture onto the muffin and top with the strawberries.
Fun facts
Did you know that strawberries grow their seeds on the outside of the fruit?
Each strawberry has about 200 seeds on it!
