email: I’m always looking for after-school snacks to serve that provide a healthy alternative to the kids running right into the pantry and grabbing the chips, which, of course, they still do when I’m not there. At least when I am there supervising the after-school activities, I know they’re getting one extra balanced snack into their day.
These recipes have gotten the "thumbs up" from my kids and are great for meals or snacks. Plus, they make good use of this season's bounty – the apple.

Apple Banana Smoothie
1 medium apple
1 banana
1 cup milk
1 cup of ice
1 teaspoon vanilla
1 teaspoon cinnamon
Wash, peel, core and slice the apple. Peel and slice the banana.
Add all ingredients to a blender, mix and enjoy.
Apple Pita Bake
1 pita
1 medium apple (golden delicious)
4 ounces Monterey jack cheese
1 teaspoon cinnamon
Honey
Pre-heat the oven to 400 degrees.
Slice the pita lengthwise so that you have two round pita circles.
Wash, peel, core and slice the apple into thin slices; set aside.
In a bowl, mix the cheese and cinnamon together.
Place the pitas onto a nonstick baking sheet with the interior of the pita facing up.
Drizzle a very small amount of honey onto the pita and spread it around; approximately 1 tablespoon per half.
Evenly place a layer of cheese on top of the honey.
Add the apple slices to the top.
Bake for 5-7 minutes until the pita is crispy and the cheese has melted.
