Kids just love all of the fun treats associated with Halloween. This recipe is great for an alternative snack, a morning classroom activity or for breakfast. 
You don’t have to follow the recipe; you can turn any old muffin into a cupcake or use a boxed mix to simplify.  Have a little fun with this project, and to keep the kids in check for trick or treating, let them know all eyes are on them this Halloween by creating edible eyeball treats.

All Eyes on You Muffin Cupcakes

Supplies needed:
Powdered sugar doughnut holes
Black gel frosting tube
Red gel frosting tube
Green or Blue gel frosting tube
Muffins or cupcakes
Frosting

Frost the top of a muffin with vanilla or any white frosting. Cut a powdered sugar doughnut hole in half and place the flat part down onto the cupcake. Put a circle of blue or green gel frosting on the top of the doughnut hole Add black gel frosting to the center to create the pupil. Use the red gel frosting to create bloodshot eye lines.

Zucchini Carrot Muffins

1  cup sugar
1 cup brown sugar
1/2 cup butter
3 cups shredded zucchini
1 cup shredded carrots
2/3 cup water
4 eggs
4 cups flour
2 teaspoon baking soda
1-1/2 teaspoon salt
2 teaspoon vanilla
2 teaspoon cinnamon
1 teaspoon baking powder

Heat oven to 350 degrees.  Use cupcake liners for baking.  Mix sugars and butter together.  Add in the zucchini, carrots, eggs and water.  Mix.  Add in all other ingredients and mix thoroughly.  Bake for approximately 25-30 minutes.  The recipe will make about two dozen muffins.

Cream Cheese Frosting

2 ounce cream cheese, softened
2 cups powdered sugar
1/2 teaspoon vanilla
1/4 cup butter, softened
2 tablespoon milk
Mix all ingredients together and spread.
