Chick and DitPosted on Sat, February 2nd, 2008 I would like to contribute some great recipes for the recipe exchange. These are all family favorites in our house. Enjoy!
2 to 3 boneless chicken breasts, cleaned and cut into 1 inch pieces
1 cup long grain white rice
2/3 cup ditalini pasta
1 package white mushrooms, cleaned and sliced
1 10 oz. package frozen peas
In one saucepan prepare the rice: 2 cups water and a little salt, and add the rice. Bring to a boil, stir and reduce the heat to low. Cover and simmer for 20 minutes. In a second saucepan, bring water to a boil and add the ditalini. Cook according to package directions. As these are cooking, stir-fry the chicken in a pan with a little olive oil. Season generously with salt, pepper, and mustard powder. Cook the peas in a saucepan. When the chicken looks cooked, toss in the mushrooms and cooked until wilted, a minute or two.
In a large pasta bowl fold in the cooked rice, drained ditalini, chicken and mushrooms, and the peas. Toss gently and serve hot.
