Chicken Salad with ApplesPosted on Sat, February 2nd, 2008 Recipe makes about 4 servings of 1 cup each
Ingredients:
• 2 cooked chicken breasts (about 12 ounces), cut up into 1 inch cubes
• 1/2 low-fat or fat-free mayonnaise
• 1 medium or large Granny Smith apple, diced
• 1/2 c. walnut pieces
Combine chicken cubes, diced apple, walnuts, and mayonnaise in a bowl and mix well. Serve with whole grain crackers or on top a bed of mixed greens
